| 1 | 11/1/2005 | 11/30/2005 | R.R. Belgian Ale Yeast 2 | R.R. Wine 1 & Brettanomyces | Redemption was inspired by a
trip that Natalie and Vinnie took the Belgium in 1999. Belgian style “Single”
ales from many of the Trappist breweries helped inspire this beer. Because we
love Brettanomyces, we decided to add a little Brett to the first bottling of
Redemption. Who knows if we'll continue to add Brett the Redemption bottles
in the future, but all of our test bottlings with Redemption using the Brett
were positive. IF YOU STILL HAVE BOTTLES OF THIS, PLEASE MOVE TO
REFRIDGERATOR AS THEY MAY BE OVER CARBONATED DUE TO THE BRETT
FERMENTATION out a little more than in the past. Although, this will lighten the body a little, it should make it more drinkable overall. |
