Beatification is a blended beer using Sonambic, which is 100% spontaneously fermented. We start by filling our koelschip or horny tank and let the wort sit overnight to capture the wild yeast and bacteria from the air. The following day, this wort is sent to used wine barrels where it will ferment and age out. Beatification has notes of citrus and earthiness with a tart finish. This beer is refermented in the bottle creating a natural carbonation and a small layer of yeast sediment.
